Do the actual colors of the sabers really represent something in the SW series or is it just different colors (it's just a conicidence that the Siths have red sabers?).

It's very, very lightly established that blue is for Jedi Guardians, green is for Jedi Consulars, yellow is for Jedi Sentinals, purple is for Jedi Weaponmasters, and the Sith universally use red.
That's what I've gathered from various non-official sources. I don't think anything has ever been made official. In fact I did read in the Expanded Universe that the only reason the Sith use red is because when they first formed, they conquered a planet that had a very large cavern of red crystals.

Jedi Sentinels
As Admiral mentioned, saber color being "assigned" to a particular "type" of Jedi isn't necessarily what would be called Star Wars cannon... it is, however, somewhat established in the RPGs, video games, and other 'expanded universe' stuff. In many of those you'll find it mentioned that a blue saber is typically carried by a Jedi Guardian (this being a Jedi who uses the Force more to enhance his combat abilities, physical skills, etc), green sabers are often associated with Jedi Consulars (Jedi who use the Force more to develop/enhance their intellectual/diplomatic/whatever abilities)... and then there are the Jedi Sentinels with their yellow sabers. Sentinels, from what I understand, are the "middle ground" between Guardians and Consulars where use of the force is concerned and, really, are more the 'watchmen' of the Jedi order. Sentinels are tasked with keeping an eye on the dark side, so to speak... If a Jedi turns to the dark side, for instance, a Sentinel may be tasked to find and either redeem (bring back to the light side) or elminate the dark Jedi, etc.
